Institutional Canteen Kitchen - Bangalore

Project Overview

An institution in Bangalore needed a canteen kitchen built for high-volume feeding of more than 500 meals a day. The kitchen had to cook in bulk, hold food safely and serve a steady flow of people through defined meal windows. Steelkraft designed, fabricated and installed the full canteen kitchen in grade 304 stainless steel.

The Brief

The operation needed dependable volume day after day. That meant bulk cooking equipment that could produce large batches, serving counters that hold food at safe temperature through each sitting, and a dishwash section that keeps pace with the return of hundreds of trays. Hygiene and easy daily cleaning were central to the brief, given the number of people the kitchen feeds.

Our Approach

On the site visit we studied the meal schedule and the movement of diners, then designed a layout that separated bulk cooking from the serving front and gave the wash area its own return path. Bulk cookers and boiling pans went under a heavy exhaust hood, and heated serving counters held food safely through each sitting. Coved corners, sealed welds and proper drainage were built in so the kitchen stays clean and passes inspection. Everything was fabricated in-house and the layout was signed off before manufacturing began.

The hygienic build keeps the kitchen passing its inspections, and the layout is quick to clean at the end of each day. Our team backs the installation with an annual maintenance contract so the kitchen keeps running through years of daily service.
