Project Overview

A complete corporate canteen kitchen setup for an IT campus cafeteria in Hinjewadi Pune serving 1500 meals per day across breakfast, lunch and snack services for a major technology company.

The Brief

The IT campus required a complete canteen kitchen capable of serving 1500 employees across multiple meal services. The Hinjewadi campus had Maharashtra FSSAI requirements for corporate food service and specific building management guidelines for exhaust and drainage.

Our Approach

Steelkraft visited the Pune campus and designed a high-volume canteen layout with a bulk cooking zone, a live counter for fresh preparations, a cold counter for salads and desserts and a high-capacity wash-up zone. The Hinjewadi campus building had strict guidelines for exhaust duct routing, so Steelkraft coordinated with the building management to design a compliant exhaust system within the available shaft space.

  • Gas bulk cookers in 150 litre and 300 litre capacity
  • Bainmarie serving counters with hot cases
  • Live cooking counter with two burner range
  • Cold display counter for salads
  • Undercounter refrigeration
  • Stainless steel work tables
  • Commercial conveyor dishwasher
  • Pot wash sinks and complete stainless steel kitchen furniture

Outcome

The canteen kitchen was operational within seven weeks. The conveyor dishwasher handled the peak post-lunch rush without backup and the bulk cooking equipment consistently delivered meals on time across all three service periods.
