Project Overview

A complete cloud kitchen equipment setup for a delivery-only kitchen operation in Gurgaon serving five food brands on Swiggy, Zomato and direct delivery across the Gurgaon and South Delhi delivery zones.

The Brief

The client required a complete kitchen setup within a 500 sq ft commercial kitchen space in a Gurgaon cloud kitchen facility. The space needed to support five food brands simultaneously with dedicated prep zones, adequate refrigeration for five different ingredient sets and a compliant exhaust system within the facility's shared exhaust infrastructure.

Our Approach

Steelkraft visited the Gurgaon facility and designed a compact layout that maximised the 500 sq ft space with five compact cooking stations arranged along two parallel walls. Delhi's extreme temperature range from winter cold to summer heat required refrigeration units specified for the local climate conditions. The facility's shared exhaust system required Steelkraft to design individual exhaust connections that integrated with the building's main exhaust duct without reducing extraction efficiency.

Equipment Installed

  • Five compact two burner cooking ranges
  • Five under counter refrigeration units
  • Stainless steel work tables with undershelves for each station
  • Shared exhaust hood connecting to building exhaust duct
  • Three sink unit for shared washing
  • Stainless steel storage racks and dedicated ingredient storage shelves for each brand

Outcome

The cloud kitchen was operational within four weeks. All five brands launched simultaneously and the kitchen handled peak dinner delivery volumes without any bottlenecks. The under counter refrigeration specification for Delhi's climate has maintained consistent temperatures through both summer and winter operating conditions.
