Project Overview

A complete hotel kitchen installation for a five-star hotel property in Mumbai. The project covered the main kitchen, banquet kitchen and cold storage across 2800 sq ft in the hotel's lower ground floor.

The Brief

The hotel required a complete kitchen overhaul before opening a new dining concept. The existing kitchen was undersized for the planned volume with inadequate exhaust ventilation and insufficient refrigeration capacity for the new menu.

Our Approach

Steelkraft visited the Mumbai property and conducted a full site survey before designing the layout. The new design separated the hot kitchen from the cold kitchen, added a dedicated banquet preparation zone and improved the wash-up workflow to handle 500 plus covers per service. Mumbai's high humidity and salt air environment required extra attention to material specification, so all equipment was fabricated in grade 304 stainless steel with additional surface treatment for coastal durability.

Outcome

The kitchen was installed and commissioned on time before the hotel's dining reopening. The new layout increased kitchen efficiency and the improved exhaust system eliminated heat and smoke issues that had affected service quality in the previous setup.
