Project Overview

A complete hospital canteen kitchen installation for a multi-specialty hospital in Ernakulam Kochi serving patients, staff and visitors across three meal services daily.

The Brief

The hospital required a HACCP compliant canteen kitchen capable of producing 600 plus meals per day across breakfast, lunch and dinner services. Kerala FSSAI requirements for healthcare facility kitchens required strict separation of raw and cooked food areas, dedicated dietary preparation zones and hospital-grade cleaning and sanitisation facilities.

Our Approach

Steelkraft visited the Kochi hospital and designed a HACCP compliant layout with separate raw ingredient preparation, cooking, dietary meal preparation and wash-up zones. The Kerala climate requires additional attention to ventilation design, so Steelkraft designed an enhanced exhaust system to handle the high humidity environment and maintain safe working temperatures in the kitchen.

Outcome

The kitchen passed Kerala FSSAI inspection for healthcare facility food service without any observations. The new layout reduced meal preparation time by 30 percent and the improved serving counter design eliminated bottlenecks during peak meal service hours.
