Project Overview

A complete restaurant kitchen installation for a 90 cover multi-cuisine restaurant on Old Mahabalipuram Road in Chennai serving North Indian, South Indian and Continental menus.

The Brief

The restaurant required a full kitchen setup within a 650 sq ft space on OMR with FSSAI compliance for Tamil Nadu food service regulations. The menu required separate cooking lines for Indian and Continental cuisine with adequate refrigeration for fresh ingredient storage.

Our Approach

Steelkraft visited the Chennai restaurant space and designed a layout with two parallel cooking lines, one for Indian cuisine with tandoor and bulk cooking equipment and one for Continental with griddle and salamander. The OMR restaurant corridor has strict CMDA guidelines for commercial kitchen exhaust, so Steelkraft designed the exhaust system to comply fully with Tamil Nadu FSSAI requirements.

Outcome
